Betty Crocker Style

I made shepherd's pie tonight and it was amazing =) A little taste of home that was much needed. And the best part was that I didn't even need a recipe! I just mashed some potatoes with chicken broth (I didn't have beef) then layered some cooked beef then corn, then the potatoes, then beef, corn, potatoes, and Voila! Shepherd's pie! I am quite proud of myself for this one. I have been surprising myself with my cooking abilities here. I have made potato leek soup, and the pie, and all kinds of stir fry's... it's been great! I am not really looking forward to getting back to alliot food. However I feel like I am super prepared for senior year cooking on my own. It's sweet cooking for yourself, except dinner tonight ended up being enough for 3. My only complaint is that I have no one else to cook for here, I just have left overs for a few days then another wonderful meal! Oh and I never made it out last night... it rained from the time I was considering going out (about 8 when it began) until this morning well after I got up (maybe 3 when it stopped). And when I say rain, I mean a complete downpour that made me worry if the sewer system was up for the challenge. Having not left the house today, I will soon find out as I am off to Kailah's for a night of socialization!
